Well hello there fellow casserole-makers and cooks. At last, let’s talk casseroles! It has been a busy winter, writing for and managing Apartment Therapy’s food and cooking site, The Kitchn and going on the road with Not Your Mother’s Casseroles. But I want to give some behind-the-scenes peeks into this hefty collection of fresher, more modern casseroles. Let’s get going, shall we? I thought I’d share a photo of the first casserole I made for this book and describe how I think it’s a perfect expression of how fresh and tasty a modern casserole can be.

The casserole is Summer Vegetable and Fresh Mozzarella Gratin (page 114), from the chapter called Vegetable Tians, Gratins, and Braises. This is the simplest thing in the world, but it’s packed with flavor. You just take some fresh summer squash and zucchini, tomatoes, and bell pepper, and toss it all with freshly-minced garlic. Drop in some gobs of fresh mozzarella, and top with Parmesan and bread crumbs. Bake until oozing and golden — all those fresh vegetables get intensified in the oven, and of course the mozzarella melts until gooey.

This is the first casserole I made for the book, and its impromptu, improvisational nature and of course its garden-fresh taste inspired the rest of the recipes in the book.
